Mary Jo's and my favorite sweet potato is Satsuma Imo, which I scored starter tubers of two years ago at south Tampa's humble but wonderful DoBond Market across the street from Hardin's Rose Nursery. It is barely sweet, quite savory, more like a regular potato or true yam. She does not liked fried foods, so boils or microwaves hers. I brown mine, slowly, covered, in a thin layer of either coconut oil or olive oil, and serve with ketchup and/or hot sauce. Good producer too.
