Water Spinach (Ipomoea aquatica) is non-native and like water hyacinths can run amok in lakes and ditches in Florida, so I grow mine only in isolated containers, like this scavenged fish tank filled with very wet, quite acidic compost. A hard cut back twice a month prevents tough lanky vines from forming and forces the plants to make short dense tender tufts wonderful in stir fry dishes. Super tropical so mine goes dormant each winter then revives when the humid heat returns.
