Waste Not Want Not


I have been surprised by teaching gardening and urban farming classes here at my home and gardens to learn just how many gardeners, even seasoned ones, don't know that the leaves of all the cultuvated brassicas, like cauliflower, broccoli, daikon,Brussell's Sprouts etc. are not only edible, but delicious. I love making salads that are easily 50% broccoli leaves. These various brassicas leaves are also wonderful chopped into stir fry, soups, casseroles, omelets plus I use them to make awesome home made kimchee. I am growing a LOT of Waltham 29 broccoli (my favorite variety here and in Denver since 1984) this year and will soon begin blanching and freezing leaves to enjoy in dishes this summer.
