This fast growing tropical sub-shrub bears nutritious leaves that can be cooked and served much like collard greens, but it is the large starchy roots that have made it a staple of tropical peoples for many centuries. The 'yuca' served in Cuban restaurants, and tapioca are both derived from these roots.
